Since late 2024, Le Colegram has been based at 12 rue Henri Dupuis, in a 19th-century Regency mansion. Here, chef Jonathan Dumaine sublimates local produce: cream of Saint-Omer cauliflower, filet of audomarois beef, vegetables from the market... while Inès Dumaine, pastry chef and room manager, enchants with her desserts, like this strawberry tropézienne. Under the Empire chandeliers and amidst marble and modular lounges, tasting becomes a sensory experience, between heritage elegance and inventive cuisine.
