Espédaillac is a typical Causse village, restored with care and respect, in the heart of the Parc naturel régional des Causses du Quercy. Espédaillac takes its name from the Hospitallers who settled here in the 12th century. Numerous dry-stone walls, communal lakes and meadows, open wells, cazelles and sheep barns enrich the village's rural heritage. During his visit, Maurice Faure, Resistance fighter, minister, deputy and senator for the Lot, and member of the Constitutional Council (1922-2014), described Espédaillac as "the balcony of the Quercy Causses". A renowned blue-veined cheese is made here, the Bleu des Causses, a cousin of Roquefort.
