Since 2023, the Carrau family, dedicated breeders, have been running the Gailhou-Durdos cannery in the Hautes-Pyrénées. Having worked with the company for 40 years, they now master the entire chain, from meadow to plate, honoring the know-how of three previous generations. The emphasis is on local produce and short distribution channels. Their stores are packed with duck-centric delights such as foie gras and cassoulet, as well as other specialties such as blanquette de veau. Other local products include honeys and wines.
