This half-timbered building dating from 1780, on the outskirts of Castelnau on the way to Thermes-Magnoac, offers a gourmet stopover rooted in the terroir. The couple have kept the generosity and conviviality of their native Basque country close to their hearts: lamb sweetbreads with porcini mushrooms, baked camembert, chipirons with Espelette chilli pepper and Serrano ham... The common denominator of all these inspired dishes: rigorously selected fresh produce. In fact, the menu changes every month according to what's in season.
