Founded in 1265 at the instigation of the Cistercian abbey of Planselve, the town covers the hill overlooking the Gimone. The main street slips curiously under a 13th century wooden market hall, while fifteen short steep streets cross it perpendicularly. Some buildings are to be discovered, such as the church and its octagonal brick bell tower, the 16th century chapel of Cahuzac, the remains of the Cistercian abbey of Planselve and of course the 14th century market hall. Gimont is a gourmet city, and its famous fat market is held on Wednesdays from November to March, the same day as the weekly market
