The village of Sainte-Eulalie-d'Olt was founded in the Middle Ages, at the same time as its castle. The village is organized around the central square, where you'll find a museum dedicated to the painter Marcel Boudou, houses with lauze roofs built of pebbles with or without half-timbering, the Romanesque and Gothic church dating from the 11th century... It's a medieval town richly decorated with flowers, and has been awarded the title of "Most Beautiful Village in France". If you're there on All Saints' Day, don't miss an unusual auction: for centuries, the auctioneer has started with a live hen as the first lot, in order to offer masses to the deceased.
