Restaurant offering a refined and inventive cuisine with very elaborate dishes
Vasco Baldisserotto describes himself as the "Marco Polo of gastronomy". Of Venetian origin, he explored the kitchens of Swiss and Italian houses, before collaborating with the Bras family in Aveyron. Since the end of 2022, he has been at the helm of the Opéra restaurant, where he takes guests on a culinary journey that changes with the seasons, in four, six or seven courses. His dishes, crafted with respect for French traditions, are as tasty as they are refined... The restaurant is already one of Ruthénois' finest.
