Karine ripens her own goat's cheeses, Saint-Nectaire and others. Beaufort, Comté and Gruyère are magnificent hard cheeses with changing taste notes. Soft cheeses with bloomy or washed rinds are divine, like Maroilles or Langres. As for seasonal cheeses, Karine recommends Trappe Echourgnac from Périgord, matured in walnut liqueur, Grataron d'Arêches fermier, a goat's cheese from Beaufortain in Savoie, and Saint-Nicolas from Hérault, made from whole raw ewe's milk. Another favorite is the sweet, fragrant tomme aux fleurs.

There's also a lovely mushroom stand, and a small poultry shop. And don't forget the creamery, with its mouth-watering yoghurts and crème fraîche. At the entrances to the market, you'll find nurserymen, bakers and a fishmonger offering excellent cod brandade. This is the place to catch up on the previous day's rugby match, a warm and friendly market.

It's been given a facelift to better welcome the people of Agen and beyond, with more space and a more practical layout. The lively market is staffed by some twenty traders and craftsmen, offering top-quality produce and the friendly welcome you'd expect from a market. Sylvie is at her stall from the first light of day, and has been since 2003. Her poultry, labelled, is supplied by a Landes producer and transformed by her. She offers roasts stuffed with guinea fowl, chicken, duck and rabbit decorated with apricots or prunes, but also marinated chicken preparations. Her duck fillets à la Prima Verra are divine, a preparation of dried tomatoes, olive oil and champagne marc vinegar. Do you like offal? You can treat yourself to oxtail or even veal strawberries.

The best address for seafood. Carine and Laurent have been living in the covered market for many years now... Here, the stall is always attractive and clearly gives the desire to start cooking all types of fish. A wide variety of lines and fish from the French coasts are offered as well as, regularly, surprising arrivals. The plus: the fish shop offers freshly prepared dishes and platters.

Butchery certainly, but also pork-butchery and excellent to taste thanks to the beautiful work of Loïc, chief pork-butcher and of Evelyne Pineau who holds this Côté Cochon stamped Pineau. Here, we work with beautiful material since they are simply black pigs of Bigorre and also pigs of the house Louvel, famous house of breeding located at Gontaud de Nogaret and that we do not present any more. Everything is homemade and it makes you want to eat! Coppa, rillettes, white ham, chorizo, pata negra... or even medal-winning black pudding form a magnificent showcase.
