The menu is based around duck: half-cooked duck foie gras with Armagnac, sliced duck breast grilled on a plank, golden confit with fleur de sel... The great classic: the long-cooked lamb mouse. Fish: sea bass or scallops. Choice of desserts: rum baba, hot apple pie with vanilla ice cream, chocolate fondant.
