Etymologically, Laguiole comes from La Gleisola, meaning "little relief church". The latter was replaced by a main church built in the 17th century on the site of a former fort. This village, firmly rooted in its farming tradition, is well known for its 19th-century cutlery craftsmanship, which has been overtaken by industrial production. As you walk down the square, you come across the monumental Taureau de Laguiole, the work of sculptor Georges Lucien Guyot, symbol of the Aubrac breed and today a good luck charm for passers-by who touch it. A visit to the cutlery factories, the pride and joy of the village, is also a must.
