The village dominates the valley of the Lèze. Saint-Ybars is an ancient Gallo-Roman settlement which became, in the Middle Ages, the small town Villa Sancti-Eparcii, in honour of Saint Eparche. A statue of the latter, in polychrome stone from the 15th century, stands above the church, mixing Romanesque and Gothic styles. The church was fortified in the 13th century, its old square keep was replaced by a hexagonal bell tower, identical to that of the Augustinians of Toulouse in 1527. The last tower of the old castle of Saint-Ybars, built in the 13th century by Roger IV, disappeared in 1842 and its stones were used to build the current town hall.
