Here, you won't find any pastries, but chocolates in bulk or in boxes, snacks, beggars and numerous chocolate bars, including for diabetics. You'll love the chocolate ball that melts in contact with hot milk, releasing a marshmallow teddy bear, the Dax bullring medal to take home as a souvenir, and the P'tit Landais ball cone. Snacks are also available.

Ttotte (pronounced "tiotié", Joseph in Basque) and Stéphanie run this pretty chocolate shop under the arcades of the Splendid. The Maître Artisan Chocolatier, who cut his teeth at the prestigious Maison Pariès, has even opened a second store, La Fabrique de Ttotte, in Saint-Geours-de-Maremne. Specialities include: peanut tuiles, orangettes, chocolate chouchous, croq'maïs... And l'Or de Ttotte, a dark chocolate made from a blend of beans from Bolivia, Ecuador and Venezuela, combined with the texture of South American brown sugar.

It's impossible not to succumb to Monsieur Gaudet's creations, including Le P'tit Landais (and its balls version), or a vanilla cookie topped with a peanut praline, all coated in dark or milk chocolate. The finest delicatessens in the South-West have a special place for them. You can also try our macaroons, with the promise of a new ephemeral flavour every three months, our many chocolates including the Dax medal, our sweets and our artisanal ice creams. And don't forget the chocolate bars for diabetics.

In fact, when you think of it, you immediately think of the russe, a creamy almond-hazelnut cookie sprinkled with powdered sugar that evokes the snowy plains of Russia. You'll find it in bakeries, on restaurant tables for dessert, and in artisan shops. In Dax, Amélie's Pastis arrives directly from Pau, where it is made by Peio, Amélie's great-grandson.
