Maury surprises and exhilarates the visitor who discovers the village set on slopes of schistose marl and surrounded by two superb limestone walls. Soft hills covered with vines undulating in the shadow of the castle of Quéribus and forming a long corridor towards the west until the foot of the Pyrenees. Here the winegrowers thank geology and the clash of tectonic plates: the vineyard produces a famous Vin Doux Naturel and grape varieties such as Carignan or Grenache which exhale their fruity aromas in dry wines with high expression. Maury is also the starting point for beautiful walks on the Cathar high places: Quéribus and Peyrepertuse
