Originally a Benedictine priory in the 9th century, the town built its bastide town in 1281, under English rule. After changing nationality 10 times, it became French again in 1451 as the end of the Hundred Years' War approached. Sauveterre was built according to the classic bastide plan. The town was surrounded by ramparts, which were destroyed in the 19th century, with the exception of the 4 access gates. Rebuilt in the 19th century, the church has retained its beautiful polygonal Gothic choir. Don't miss the restored medieval houses, the 16th-century cellar, the cellar of the Maison du Sauveterrois (13th century) and the art gallery at the tourist office.
