Located in Siran, on the chemin des Aires, Domaine des Aires Hautes is a family-run winery. Founded in 1938 by Edmond Chabbert, the estate is now run by Gilles Chabbert, the family's third generation of winemakers. Gilles' aim is to position each of his wines at the top end of its category. To achieve this, he carefully cultivates each parcel of vines, using grape marc-based soil improvers and regular ploughing. The entire production is harvested by hand and destemmed. Domaine des Aires Hautes wines are renowned for expressing the ripeness of the fruit and reflecting the spirit of the region. The domaine offers a range of reds, including fleshy, well-balanced Syrahs. Visitors are invited to discover these wines and enjoy the warm atmosphere of the region.

Located in the north of the Minervois appellation between Carcassonne and Narbonne on the terroir of the "Petit Causse", Domaine La Rouviole covers nearly 36 hectares of which 26 hectares are vineyards and 10 hectares are garrigue and olive trees. The clay-limestone soil combined with the Mediterranean influences and the freshness of the "Causse" give their wine a beautiful typicity. In organic farming since 2011 and in conversion to Biodynamic since September 2022, the Domaine offers red, white and rosé wines with dominant grape varieties of Syrah, Grenache and Carignan.

The 12-hectare Clos Centeilles family estate is a veritable treasure trove of winemaking expertise. With 23 grape varieties planted and 13 cuvées produced, Patricia Boyer-Domergue and her daughter Cécile are committed to preserving forgotten indigenous grape varieties.
