Nestled in the heart of the Côtes de Thongue vineyards, Pouzolles, like many villages in the Hérault, bears the traces of the Roman occupation. As early as the 11th century, the name Pouzolles is mentioned in many charters and cartularies, it would mean oil well, probably because of the existence of oil sources nearby. The village is dominated by the castle and its two turrets, and by the church, built on the site of the ramparts. One of its vestiges, the Saint Martin's Gate, was once defended by a portcullis, which is still visible.
