Occupied by the Romans then besieged by the Franks, the site of Cabrières saw its castle attacked by the grandson of Clovis who had married the village's castelaine, Deuterie. First razed to the ground by Simon de Montfort in 1210, taken by the English in 1379, the castle was definitively destroyed in 1885 by order of Richelieu. Nowadays, the village is famous for two things: its water and its wine. The first is linked to the presence of the mineral spring of the Estabel River in these lands, which changes into a spectacular waterfall during heavy rains. The second is that the local wine is classified as AOC and is produced in the purest tradition.
