Situated on the hillsides overlooking the waters of the Hérault, this small village is the cradle of the Clairette grape variety. Its name could come from the name of a prosperous Roman owner to which the suffix anum would have been added, meaning that the property goes back to a certain Atisus. After extensive excavations, a gigantic Roman villa was discovered south of Adissan, it could be the residence of this character. This research revealed vines and wine-growing facilities. In spite of this distant origin, it is in 1175 that the first written traces containing the name of the town were discovered in the cartulary of Aniane, it appeared under parrochia S. Adriani of Adissano, that is the parish of St. Adrian of Adissan. The history of this village was rich in twists and turns: it was the property of the Guilhem de Montpellier, the Narbonne and then the Roquefeuil families and, towards the end of the 14th century, it was Hugues d'Arpajon who was titled lord of Adissan. Subsequently, the Prévot and Lasset families succeeded him. In the middle of the 17th century, Jean de Mirman, knight, adviser to the King, general treasurer and grand-voyer of France, bought back the seigneury and it remained in his family until the Revolution. After 1789, the village stopped most of its agricultural activities to devote itself to the vineyard, which then became the main historical resource. Today, Adissan is the capital of Clairette, which is highlighted during many festive events.
