A firm fixture on the Nîmes gastronomic scene since 2017, Palosanto chef and owner Angel Laplaca, originally from Argentina, is trained in world cuisines. Every day, he offers refined, artistic cuisine, using fresh, regional produce (often organic) sourced from nearby Halles. The lunch menu changes daily and offers unbeatable value for money. In particular, we were lucky enough to try a fantastic pork medallion... Delicious! A word of advice: remember to book in advance, as places are "expensive".
