Saint-Hilaire's history is closely linked to that of its abbey, built in the 3rd century. The abbey, initially called Saint-Sernin, took the name of the first bishop of Carcassonne in the 10th century. During the Hundred Years' War, fortifications were built by the abbots around the village, which suffered from plague and famine. Then, in 1547, the village was burnt and partly destroyed by the Protestants. The abbey closed its doors in 1748, a little more than two hundred years after the monks had developed the first sparkling wine in the world (1531), the blanquette. Saint Hilaire experienced its last troubles during the French Revolution.
