Located 17 km north of Carcassonne, the village of Lastours is known for its 4 medieval castles, intimately linked to Catharism. Initially called Cabaret, from caput arietis which means "ram's head", the site is at the origin of the appellation of this terroir: the Cabardès. Following the Crusade against the Albigensians (1209-1229), the 3 primitive castles as well as the medieval village were destroyed. It was St Louis who asserted his authority by building La Chatellenie du Cabardès, with four new fortresses on the rocky ridge. The names of the 3 original citadels are preserved as well as the Tour Régine which completes this ensemble.
