The Hôtel de France restaurant is one of Castelnaudary's not-to-be-missed places to sample the famous cassoulet with goose and pork confit. The chef also offers other specialties such as semi-cooked foie gras, parillade of meats with duck breast, beef and homemade sausage. And let's not forget the iodized flavors of certain dishes, such as gambas risotto à la provençale. The brasserie area is ideal for a hearty lunch, with cassoulet, fine mixed salads and grilled meats on offer! Those who have had trouble making a choice can leave with home-made preserves of ready-made dishes, pâtés and foies gras to prolong the pleasure or share with friends and family... The establishment has seventeen well-equipped rooms and private parking. En visite a castelnaudary entre amis nous avons réservé dans cet établissement de bonne réputation mais très déçu par le fameux cassoulet de castelnaudary la qualité et le goût n était pas au rdv,beaucoup d attentes pour les autre plat la cuisson du magret demandée bien cuit et on me la servi a point j ai fait la remarque a la serveuse qui ma répondu que bien cuit c était a point ou elle n a pas voulu se fatigué ou elle m a pris pour une( andouille)!!
Je n ai pas du tout apprécié !!!
Je ne conseille pas cet établissement !!

Nous avons mangé ce jour au restaurant de l'hôtel de France. Bien évidemment nous avons prit la spécialité locale qu'on nous avait vivement recommandé. C'est un pur délice, le menu est très copieux. Le service est parfait. Merci a la jeune femme qui est un vrai rayon de soleil. Merci au chef pour nos papilles.
