In the 11th century, Robert II the Pious built a church dedicated to Saint Mary. This church was rebuilt in the 12th century to become the collegiate church of Notre-Dame. Over the centuries, the town prospered thanks to its commercial activity, the two mainstays of which were the bridge and the cattle market (which disappeared in 1867). At the beginning of the 20th century, new companies established themselves in the town, notably those involved in the automotive industry, such as Ford, Simca, Chrysler and Peugeot. Today, Poissy is one of the industrial hubs of the Yvelines region. In Poissy, France's oldest secular liqueur is distilled: noyau de Poissy.
