The history of Coignières dates back to 768, when Pepin the Short donated the village of Cotoneum ("quinces" in Latin) and part of the Yveline forest to the Abbey of Saint-Denis. In the 11th century, the commune's economic situation took off thanks to the presence of a major horse-post relay. Only the name of Bertrand de Bellac, who acquired the fiefdom in 1475, is remembered. His son was responsible for the construction of the seigniorial chapel of Saint-Nicolas in the mid-16th century. The town's only landmark is the church of Saint-Germain-d'Auxerre, one of the oldest in the region.
