LA CHAMBRE AUX CONFITURES

Honey and jam producer

Only jams, it was necessary to dare... Lise Bienaimé did it! Formerly a marketing expert at L'Oréal, she preferred to live from her passion, jam. To do so, she called on producers in order to exploit a very wide range according to the seasons. The classic - the traditional orange, apricot or mirabelle plum jams to name but a few - rubs shoulders with the original and the surprising: mango-coconut-white chocolate, banana-passion-ginger, apricot-passion-groseille or rhubarb-geranium. The company is also developing an organic range, which is being expanded over time. Also on display are spreads, honeys, chutneys and other tapenades.

ALLÉNO & RIVOIRE

Chocolatier

For their first boutique, they chose the 7th arrondissement. For the second, multi-starred chef Yannick Alléno and his pastry chef Aurélien Rivoire opted for the Sèvres-Babylone district. A bold choice, given that the area already boasts such illustrious names as La Maison du Chocolat and Patrick Roger. So how did they set themselves apart? By offering "gourmet, delicious, sugar-free chocolate". The two partners replace sugar with birch water. The result: chocolates that are good for you... and seriously delicious.

LA MERINGAIE

Patisserie

For several years now, it has been the fashion for single-product sweet stores. L'Eclair de génie, Popelini, La Maison de la chantilly... and La Meringaie, a family story with Madame (Marie), Monsieur (Benoît) and, initially, cousin Charlotte. The couple and their teams stage the meringue in different roles: solo (the Meringuettes) or as a base for pavlova with whipped cream and fresh fruit. The day we visited, the Désirée (whipped cream with coconut milk, mango, kiwi, pomegranate) was the "Meringaie" of the week. Exotic and desirable.

BOUCHERIE LE BOURDONNEC

Butchery

According to Yves-Marie Le Bourdonnec's website, it would be the smallest butcher shop in Paris: 15 m². On the right, the butcher's block; on the left, the glass cupboard where exceptional pieces of meat are kept, which have matured for 30, 45, 60 days. It's as well to say it, you have to be a distinguished "viandard" to stock up here... and not be on the lookout for spending money. Because the Angus T-bone (sirloin on one side and tenderloin on the other) or the entrecote with parsley just right have a price, but connoisseurs, whatever their preference - meats with more or less lamb's lettuce and with a more or less concentrated taste - will appreciate it. Young, professional and friendly service.
