Restaurant in Paris elaborating a Japanese cuisine, menus based on fresh and quality products and fish.

Taku, the Jin restaurant's chef offers us happiness. First, by his stature then by his culinary genius. This giant of Japanese cuisine has already four restaurants in Sapporo. It is needless to say that in Paris, other Japanese are a bit jealous. He is confident to be the best. He has only 12 seats and the customers can constantly follow the progress of the dishes behind the cuisine. There are three choices of menu and products and fishes are from a great freshness and an amazing quality with very precise seasonings. The Miso soup is quite different from bouillon in an improved water dish served elsewhere. The flavour depends on your choice. The sea bream Tartar, ginger and salmon eggs is also powerful. Sushis are quite remarkable and those with raw oyster or shrimp are simply extraordinary. However, there is no dessert. The menus are extensive, so we don't need dessert. The restaurant has been awarded a Michelin star, and you can only approve it. To enjoy without hesitation at lunch for lovers of Japanese cuisine!

We had a great dinner last night for my boyfriend’s birthday at JIN. Each course’s well planned and carefully thought. Tuna fat with Caviar is our sushi of the day! Then scallop and prawn are my long time favorites. We were at the first service, Chef Satoshi prepared everything elegantly and has a very humble character,so we discussed fish that we didn’t know and had real fun together with the team. We’ve been to Japan twice and been dining at many Japanese restaurants in Paris,but last night’s definitely something unforgettable.

Déjeuner. Une vraie parenthèse d’équilibre avec par exemple un chawan mushi pas trop fort en gingembre, des イクラ / ikura (œufs de poisson) pas trop salés… des écueils qui arrivent souvent même dans des sushi ya €€€€.

Sushi parlons en, des magiques thon gras, mi gras, saumon, encornet avec une pointe de yuzu… une st Jacques tout aérienne ☁️.

Des poissons plus exotiques comme du 金目鯛 / kinmedai (beryx).

Un 鯖寿司 / sabazushi (maquereau) « spectacle » grillé au 備長炭 / binchotan (charbon japonais)

Petite rue peu passante, un moment hors de Paris en plein Paris.

Pour les belles occasions. Équipe très sympathique !

パリにいながら本格的なお寿司を味わえる貴重なお店、お寿司だけでなく小鉢や一品料理も素晴らしかったです。初夏らしく涼しげな器にあしらわれた蟹とキャビアの一品には桃 (ネクタリンだったかも) が入っていて爽やか。アワビの茶碗蒸しとかアンコウの磯辺揚げなどが印象に残りました。ネギトロタク手巻きは上品なたくあんの量が絶妙で、シェフはたくあんも桂剥きされていました。鯖寿司は備長炭で焼き目を付けてくれたりエンターテイメント性も高かったです。

Le renouvellement du restaurant avec le nouveau chef ne m’a pas déçu ! L’ambiance, le repas… tout était très bien. La qualité des plats était incroyable et j’ai donc passé un très bon moment. J’avais l’impression d’être au Japon. J’y retournerai pour sur!
