Benefiting from high-quality water in the heart of the Landes region, this sturgeon farm, which is open to visitors, produces top-of-the-range caviar.
Nestled in the heart of the forest, l'Esturgeonnière is a 6,000 m² farm and one of only 7 breeders and producers in France of 4 species of sturgeon, producing 4 tonnes of caviar. And it takes 8 to 10 years to produce quality eggs, ranging from 2.5 to 2.7 g. Firmly committed to an eco-responsible approach to aquaponics, L'Esturgeonnière recycles and transforms every part of the fish, from fillet to carcass, into food for other fish. Perlita caviar is distributed around the Arcachon basin and in Bordeaux.
