Here, the Nikkei cuisine is in the spotlight: raw fish combined with Peruvian spices. But how did Japan and Peru come together on the plates? Well, at the end of the 19th century, thousands of Japanese migrated to South America and incorporated Peruvian products into their recipes. The result was frankly successful. On the menu: 2 ceviches (vegetarian or swordfish), sautéed beef, bean soup and salmon marinated in miso sauce. A deliberately limited menu to favour the freshness of the products.
