Simon Rousseau is a culinary creator of ice cream flavours. He was inspired by Thai techniques to produce iced planchas from -20°C to -25°C. The products are made from a homemade milk base with only milk, a hint of agave syrup, seasonal fruits and local products from sustainable or organic farming whenever possible. Simon Rousseau makes ice creams for rolling, eskimos without milk and granités. He participates in many events where he offers alcoholic or savoury ice creams.
