It's hard to choose between the various hams, sausages and chorizos, or between the prepared dishes: veal axoa, cassoulet, chipirons, salmis de palombe, poulet basquaise, piperade, confit, magret... Pair with a good artisan cheese, Irouléguy wine, manzana verde or patxaran beer. For sweetness, succumb to the divine jams and jellies or the excellent Aldudes butter.
