Culinary creator of ice-cream flavours, Simon Rousseau was inspired by Thai techniques to produce ice-cream rolls from -20°C to -25°C. The products are made from a milk base with a hint of agave syrup, seasonal fruit and local products (if possible) from sustainable or organic farming. Simon Rousseau offers ice creams to roll, milk-free popsicles and granita. He participates in many events where he offers alcoholic or salted ice creams.
