Although resolutely turned towards the future, the distillery retains the ancestral know-how of the Haut-Doubs region, as well as the spirit that gave it its letters of nobility. While the famous Pontarlier is still present alongside the traditional spirits of the Massif Jurassien, the Absinthe range, or Fée Verte, continues to develop with new and innovative recipes, and even gin or gentian. Everything is in place to perpetuate this fine company.

Open Monday to Friday, 9am to 12pm and 2pm to 6pm; Saturday, 10am to 12pm. Guided tours Monday to Friday at 10:30 am and 4:30 pm; and Saturday at 10:30 am (tour lasts 30 to 45 minutes). Reservations required for groups. Tours (€5/adult).

Situated in La Cluse-et-Mijoux, the historical site of the Fort de Joux, at the exit of the world capital of absinthe, Pontarlier. Since its creation in 1890, the Distillery Les Fils d'Emile PERNOT has been perpetuating the ancestral know-how of distillation in the Haut-Doubs.

Les Absinthes
Absinthe, a legendary alcoholic beverage, is renowned for its emerald green color and distinctive taste. This spirit, also known as the "green fairy", is famous for its high alcohol content, which can reach up to 75%. But absinthe is much more than just a strong spirit. It's a unique sensory experience that combines aromatic herbs to create a complex and bewitching palette of flavors.

The absinthe ritual
Using an attractive absinthe fountain, ice-cold water is dripped onto a sugar cube placed on a perforated spoon, known as an absinthe spoon, which in turn is placed on the rim of a stemmed glass containing 3 to 5 cl of pure absinthe.
THE APPETIZERS
Pontarlier
Pontarlier is an aniseed-flavored aperitif distilled from natural plants, in particular green anise, which gives it all its power and richness. It's a refreshing drink with an herbaceous flavor that sets it apart from Pastis. It can be enjoyed neat as an aperitif or diluted with fresh water. It is a specialty of the town of Pontarlier, in the Franche-Comté region of France, which is renowned for its spirits and culinary traditions.
Guignolet-Kirsch
Guignolet-Kirsch is a traditional liqueur made from several varieties of cherry, including the guigne, from which it takes its name. This aperitif is made by macerating cherry juice, Kirsch and sugar.
La Clusienne
La Clusienne is obtained by distilling local wormwood plants blended with freshly pressed grapes from old Chardonnay vines.
La Pontiane
Pontiane is a regional aperitif made directly from gentian brandy. In fact, it's the result of maceration of yellow gentian roots with gentian brandy and a touch of sugar.
Gentiana
Gentiana is a wine-based gentian aperitif. It can be enjoyed on its own, with ice or beer, or as a cocktail. Gentiana develops a sweet, slightly lemony taste.
