In Sarlat, the market has a special importance and Mathieu and Clément will not deny it. The traditional open-air market is held on Wednesdays and Saturdays, with a general market stretching along the Traverse in addition to the farmers' and food stalls set up around the Place de la Liberté. Very well stocked, it is very popular. Around the cathedral, it is a real gourmet stroll. In summer it is a tourist destination. The covered market in the former church of Sainte-Marie, designed by Jean Nouvel, is held according to variable schedules depending on the season, with night markets added during the tourist season. Organic market, Thursdays in the late afternoon, Place de la Poste. In winter, it is the great return of the Tuber Melanosporum, controlled truffle market, by the group of truffle growers of the Périgord Noir, every Saturday morning from 9am to 12pm from December to the end of February, in a local, rue Fénelon; and wholesale truffle market, place de la Liberté. In summer, discovery of the summer truffle, on Tuesdays in July and August, from 6 to 7 pm, stand installed between the panoramic lift and the covered market.
