The cradle of Champagne! This pretty village with its 275 ha vineyard on the hillside, classified as Premier Cru, owes its fame to the no less famous Benedictine monk, Dom Pérignon, father of Champagne. Born in Sainte-Ménéhould, Dom Pérignon spent most of his life in Hautvillers, until his death in 1715. Today, he rests at the foot of the altar in the nave of the abbey church, which also houses the relics of Saint Helena, mother of the Emperor Constantine. Hautvillers is also a pretty and picturesque village where you can stroll along the cobbled streets to admire the many wrought iron signs representing the different stages of the work of the vineyard.
