In Montlivault, Nicolas Aubry's Michelin-starred restaurant Ezia combines culinary excellence with a human touch. Inspired by his roots in Guérande, the chef creates daring, iodized dishes, such as rock fish with kombu, poached leeks with shellfish and dulse seaweed, or apple baba with celery infusion. With a 2.5-hectare kitchen garden in Beaugency, Ezia favors seasonal and local produce, achieving 85% self-sufficiency in vegetables. Her ambition is to innovate without betraying her values.
