It is in the heart of the small International Marsh, rue Bonaparte, at the Influence restaurant, that Petit Smart and a handful of culinary journalists in the region were welcomed for a press lunch with anise flavors. Indeed, the prestigious Pastis Henri Bardouin invited himself in the chef's kitchen Aurèle Gasperoni and challenged him to cook from its flavours.

 

 

Challenge raised aloud by the leader!

 

Before embarking on this exercise, Aurèle Gasperoni immediately turned to the composition of pastis Henri Bardouin known for her many flavours from the Richesses riches but also from all over the world. Among them, the chef decided to concentrate mainly on dill, fennel, tonka bean and pastis.

It is therefore from these elements that Auréle Gasperoni has afféré in the kitchen and has concocted a sensational menu, beginning with a speck of dill and green lemon followed by a red mullet and its declination on fennel and henri Henri Bardouin who preceded a duck duck to invasive and raw asparagus, raw and cooked to finish on a un creamy bean chocolate, caramel and hazelnuts.

It is now a year since this table was managed by the Nice Aurèle Gasperoni. This young and talented chef has a sacred journey: training at the Institut Paul Bocuse, followed by enriching experiences at the Dean*** in Paris, the Basque Inn * or the Escenciel in Beaulieu-Sur-Mer. Attached to his hometown it is naturally that he decides to ask his valid and open his own restaurant in Nice, rue Bonaparte to make us discover his kitchen, result of a learned mixture with influences from here and elsewhere. The products he uses in his kitchen are very close to those who make up pastis Henri Bardouin, which is why the chef has made a modest admission to us that the exercise was not so difficult or even natural.

Pastis Henri Bardouin is often called «The Great Cru of Pastis». It owes this reputation its fine and elegant composition made of no less than 65 plants and spice. This mixed pastis developed in Provence at Forcalquier by Distilleries and Domains de Provence finds its place on the most creative tables in France.
