Nostra Senyora del Pilar is the patron saint of Spain. She is therefore celebrated throughout the country on 12 October. In Formentera, folk dances, concerts and local markets are held at the Pilar de La Mola. It is also a day when pigs are slaughtered, followed by a tasting of cold meats. This is an opportunity to try sobrassada, a typical Balearic sausage, and botifarra, a Catalan pork sausage stuffed with spices.
