Who remembers going to the grocery store to get wine by the tug-of-war with his bottles in a bottle holder? Here, it's simple: the customer arrives with his cubi or bottles, he fills them from the wine tank of his choice, most of them being organic. If he doesn't have any bottles, the house provides him with nice ones, designed on the model of the old lemonade bottles. The Barav is a restaurant, a bar and a cellar. A small fine grocery store is filled with a few very well selected and high quality products. We will only talk about the cellar which has about 300 references from the vineyard of France and the world from 4 €… It is a cellar that moves: tasting 2 times a month, meetings with wine growers, exceptional operations, loyalty cards… It is kept by passionate people and must be guided by supplies.

Philippe is a former executive in the IT. A grandson of winemakers and especially a passionate wine lover, he decides to take everything to dedicate himself to his passion. His approach is original: he conceives a space on two levels of 100 m² entirely dedicated to wine tasting and, of course, for sale as at a winemaker. We are impressed by the stonewalling of machines where the distribution system allows the conservation of wine. About 200 references, including 80 to tasting, the choice is wide, surprising, and all the great wine regions are represented. To begin his trip, the visitor is given a registered magnetic card that he uses to select the desired wine. he then can get served of the desired dose - 3, 6 or 12 cl - to accompany the tasting of "cornets" of charcuterie or cheese and set up on a small bistrot table or in the living room corner. A smart system, since it is obviously only the dose chosen is paid thus and without abuse, allows to discover several wines by tasting. The choices of "cellar master" at the top of modernity for the concept, are often favourites, and always well-thought selections of safe values or novelties. Once a month, amateurs meet winemakers and tastings take place along with concerts. Philippe has arranged the space a little like the cellar of an individual. Wood, warm stones and copper combine beautifully to bring a warm atmosphere. The basement rooms are privatized.  

It seems logical to have implanted a vineyard on the ancient wine houses of the capital, once the largest market in the world of wine and spirits, disappeared in the 1970 s. The planting of vineyards took part in the project to rehabilitate this immense land on the banks of the Seine. Opened in 1996, this vineyard of white Sauvignon and Chardonnay occupies a surface of 660 m 2 for a total of 350 feet. Production corresponds to an average of 300 bottles per year.

It's the network's largest boutique: Le Repaire de Bacchus on Rue de Bretagne, just opposite the Marché des Enfants Rouges, has plenty to offer. Thousands of references are on offer, each one carefully selected. Here you'll find a wine to suit every taste and budget, all advised by a team of experts. And there's no shortage of spirits, too. You will find in this friendly shop nearly 500 references of beers: French suds of course, but also Belgian, Swiss, English, Dutch, Spanish, Swedish, Danish... At the head of the shop, real enthusiasts willing to "democratize craft beers from quality productions". For the amateurs, tastings are regularly organized by brewers. Repaire de Bacchus is located in one of the capital's oldest streets, in the heart of the lively Latin Quarter. As many people know, the Butte-aux-Cailles is one of the liveliest neighborhoods in the capital, thanks in particular to its wealth of bistros and wine and beer offerings. A cellar entirely dedicated to champagne! Fanny Heucq, the owner and daughter of a winegrower, has selected high quality champagnes from small farms which, for the most part, do not have access to large-scale distribution. In total, the work of more than 20 artisanal winemakers, whose know-how has nothing to envy the greatest, is honored here. For those who want to refine their knowledge of "fine bubbles", Dilettantes offers tastings and oenology workshops. It is possible to buy on the spot or on the website (about 130 references of local champagnes, plus those of the great houses).

The owners of the Rigmarole next door, Jessica Yang and Robert Compagnon, are also at the helm of Folderol, a crazy concept that's been all the rage for some time now. Here, Jessica, a former pastry chef at Guy Savoy, offers ice creams that are as surprising as they are delicious. While the repertoire still includes the great classics, the olive oil, cold brew and banana crème crue ice creams stand out. A glass of wine is available to accompany this refreshing break.

Among the various Repaire de Bacchus outlets in Paris, the establishment on rue Saint-Dominique, in the chic shopping district of the ^7th arrondissement, is no exception to the rule of excellence that is the norm.
