Nicole Boulet, recently joined by Jocelyne Didou, chose in 1999 to raise 60,000 petit gris snails on her farm. She also grows her own vegetables and fruit to make her own organic products. Of course, there is the traditional snail for the holidays, but also a whole range of snailines for the aperitif. We recommend the recipe with lentils from Saint-Flour to garnish cherry tomatoes. The Eric Llinares bakery-pastry shop is located in the center of town, at the corner of rue Victor-Hugo and rue des Forgerons in the heart of the pedestrian district. This pretty and appetizing store has seduced many Aurillac residents with its know-how, as much for the quality of its "authentic" bread as for the content of its pastries and confectionery. You can fall in love with specialties such as rye bread, Auvergne croquants, Aurillac squares...

Beautiful, artistic, gastronomic. Simple definition of this large space dedicated to the know-how of the Riol house. The two great specialties of this store are chocolate and macaroons. Founded in 1908, Maison Couderc is a recipe for success with gentian alcohol, the emblematic plant of the Auvergne mountains. It is the last independent distillery in the Cantal. Its shop offers the house products, in particular the gold-coloured Couderc gentian, but also a very wide range of liqueurs, spirits and wines. Its large bay windows also reveal a beautiful section of delicatessen and good regional products. This is normal, as the owner is an epicurean.

In the Jardin aux Escargots, Isabelle and Christophe Chaumeil raise 350,000 Gros Gris in the open air. You will be able to discover the snail farm and understand the work of these two enthusiasts, both for the breeding of gastropods and for the cooking. In the shop, you will find many gourmet dishes made from the little horned creatures but also products and herbs from the garden. You can also buy honey, pounti apple juice or lentils from Saint-Flour. Also to be found on some gourmet events in France.

Located at an altitude of 1,050 meters, 2 km from Allanche, La Roche aux Fruits offers fruit jellies, syrups, flavored oils and vinegars, plant jellies, honey and jams. No additives or chemicals are used in these delicious products made from local fruit: strawberries, raspberries, blackcurrants, redcurrants, blackberries, blueberries... For the curious, it's possible to visit the laboratory. Good to know, La Roche aux Fruits organizes promotions on two or three products every month. Hmmm, gourmet bargains at last!

This butcher's shop in the upper town is well known to locals who enjoy their organic beef pieces or their good head pâté! Dry sausages, garlic sausages, country pâtés, slices of white or country ham... the butcher's stall at the Lakeside butcher's shop honours you with a range of products, each one more appetizing than the next!

The Maison Desprat has been associated with a passion for wine since 1885. Pierre Desprat, with his two daughters Léa and Lucie, continues the family adventure and makes it a point of honour to advise and help people discover the wines of the Auvergne volcanic soil. To do this, a wide range of wines is offered in his shop. Alongside the local beverages, we find all the French and foreign wine regions. Beer, spirits and local aperitifs are also presented. A corner dedicated to delicatessen completes the offer.

At Cornets de Murat, it is logical to find the small horn-shaped cookie, a specialty of the city. And for the real gourmets, it is possible to taste it on the spot with the traditional chantilly. But Jean-Roc and Emma, the new owners, will also make you "fall in love" with their regularly updated range of cakes. The young pastry chef, a musician by the way, likes to constantly innovate. Don't hesitate to ask for, and even order, the pistachio millefeuille, the Muratais with its hazelnut-almond sponge or the Royal praline-chocolate.

Hélène Le Loup offers you a wide range of cooked dishes, flavoured Salers beef pâtés and rillettes. But above all, don't miss the specialities that have made her a success: the minced beef rolls with Auvergne blue cheese or Cantal, the Salers beef stews with chestnuts or with raisins and orange peel, which won her a "bronze goudot" at the gastronomic competition of the "Européennes du goût" in Aurillac. You will also find a lot of products from Cantal. Yummy!

After weeks of work, this pastry shop/tea room has finally reopened for our greatest happiness. A cellar of... cheeses ! At the Cave de Salers, we explain to you all the secrets of a good cheese, the one that a few producers have been making for centuries. The worthy heirs of the buronniers of yesteryear ripen more than a thousand cheeses here. They watch over them so that, during 3 to 18 months, the aromas develop under the golden rind. A visit that will whet your appetite with a tasting of 3 Salers cheeses on the slate. Try to find the aromas! And if you want to try to make an aligot at home, don't hesitate to ask them for advice!

Founded in 1956, the Saint-Bonnet-de-Salers dairy cooperative has deep roots in the region. So much so that in 2000, after only a few years of marriage, the cooperative's producer-members opted to regain their independence from a regional dairy group. Here, we stand up for raw-milk Cantal and for Cantal made exclusively from Salers cow's milk. To these values we add quality, the fruit of a long process of production and, above all, maturing of each cheese.

The Cambon butcher shop is one of the best addresses in Polminhac. The same family has been working there since the 1960s. The butcher's shop gives pride of place to Salers meat. The animals are directly bought in the farms of the sector. The delicatessen is a delight! But the Cambon house is famous in all France for its tripoux. The recipe has changed a little to include pork and lamb bellies. The cooking is done during a whole night.

The 360 Brewery is open to visitors and offers an insight into the world of brewing and the Cantalien region. The visitor is invited to go down into the production area to understand how beer is born. The visit is accompanied by a tasting. Here, the desire is to defend a quality beer and the values of the Cantalien region. The choice is therefore made to use cereals from the Auvergne and water gushing from ancient volcanoes. The range extends from white, blond or amber beers to red or triple brown beers. With moderation !
