Nicole Boulet, recently joined by Jocelyne Didou, chose in 1999 to raise 60,000 petit gris snails on her farm. She also grows her own vegetables and fruit to make her own organic products. Of course, there is the traditional snail for the holidays, but also a whole range of snailines for the aperitif. We recommend the recipe with lentils from Saint-Flour to garnish cherry tomatoes. A must visit (by appointment)!
