The Café du Levant is hidden in the bucolic setting of the small village of Aire-la-Ville, near Satigny. The menu is renewed every six weeks, according to the seasons and gives pride of place to local products such as longeole, Geneva flour and Mont d'Or vacherin. Local producers are not forgotten with, for example, the oils from Aire-la-Ville. Crus by the glass invite us to discover the best Geneva wines but also the wines of the Loire (Stéphane's home region). The dishes on the menu of the day are prepared using fresh seasonal produce. And the "food and wine pairing" menus give pride of place to the suggestions of the moment, such as the truffle menu from mid-January to early March or the lobster fantasy in the sunny season! From mid-April to the end of May, you will discover the foie gras nougat with morels, sweetbreads and pistachios or the "un air de fêtes" menu from the end of November. For gourmets, slate of local cheeses, grapes and beggars, and the gourmet sweetness inspired to the chef by the season. Any suggestions? A delicate, fragrant stopover. Just a stone's throw from the Cologny manor house, here's a delightful address for refined, homemade Italian cuisine. La Closeraie's must-try specialty is undoubtedly the oven-roasted whole fish on a bed of fennel. Flavors mingle without tangling, the rolls, served still warm, are a sinful indulgence, and the sauces settle gently on the palate. Tie-dyed and elegant in a chic, but not too chic, atmosphere, and even relaxed on the terrace in summer.

It is one of the emblematic restaurants of the Place du Marché. La Bourse has the charm of the great Parisian brasseries. Style, with its attentive waiters, bright rooms separated by vaults, a brasserie and, in the basement, superb 18th century cellars which house a carnotzet where raclette, fondues and pierrades are served, as well as pizzas. La Bourse also has a fine French brasserie menu with entrecote and home-made chips, sauerkraut and seafood in season, and shallot mitre.

In a ^17th century arcade on the Boulevard Hélvétique, the restaurant Le Patio lives up to its name, for it is indeed a place for indoor relaxation during lunch or dinner, a true Geneva institution, with a private lounge with midnight blue walls. To give you some ideas, gourmets will be able to taste a lobster, a heart of beef fillet, a beef bourguignon or a sea bass fillet. The proposed cuisine is based on beef and lobster, or traditional dishes such as frog legs.

"Gastronomy is the art of using food to create happiness," as the restaurant advocates. It's beautiful, and the tone is set. The Café de la Place, located in a village house, is always a safe bet. Always an avant-garde presentation orchestrated by the owners of the place. They make it a point of honor to compose dishes according to seasonal products mixing Mediterranean and Asian flavors. The dishes are constantly reinvented, it is an invitation to travel, the presentation is superb and the real flavors are present.

A must-see in Fribourg, this establishment was taken over a few years ago by Frédérik Kondratowicz, a Franco-Swiss chef promoted to Gault & Millau Romand de l'année in 2011: a lover of books and art who makes the restaurant his home. In a popular brasserie atmosphere at lunchtime and a more intimate, distinguished atmosphere in the evening, he offers refined, generous cuisine, always with a touch of originality. Beautiful view of the lower town and cathedral.

It's a "cottage" serving daily - and weekly - specials based on what's in season, or à la carte: boeuf bourguignon, entrecôte, Sunday half-chicken, beef fillet, tuna tataki, tartare, the eternal filet de perche or fondue, ravioli, mushroom tart, not forgetting Friday's pavé de boeuf. After walking the trails of the Valley's unspoiled nature, or after a snowy winter outing, choosing the cozy atmosphere of the L'Annexe brewery is a no-brainer! The wooded decor, the pewter bar, the curtains and the checked fabrics sublimate the decor to create a warm and cheerful harmony. L'Annexe is more typical and offers simple and good food such as marrow bone and a wide range of fondues (cheese, Chinese, Bacchus, meat). A place that we will not stop revisiting!

Cuisine of yesteryear in a setting of unusual charm, combining authenticity and whimsy. You enter a place with a unique cachet: an interweaving of cardboard boxes, direction signs, old advertising brochures, paintings and vintage touches. Small rooms with bohemian charm, friendly atmosphere, terrace in summer. René Fracheboud's cuisine is excellent: French, with flavors that are at once traditional, delicate and adventurous, such as shrimp with red curry and white chocolate sauce, or poussin with harissa.

On the trade route over the Simplon Pass, the Sun was a stopover for travellers.
